Cocoa Meringue Cookies

3 egg whites 
1/8 tsp cream of tartar 
1/2 tsp pure vanilla extract 
3-6 tsp splenda (or other sweetener) 
1 Tbsp unsweetened cocoa powder 

1. Preheat oven to 300 degrees F. 
2. Combine egg whites, cream of tartar, and vanilla. Beat until the whites form soft peaks. 
3. VERY Slowly add sugar; beat until stiff peaks form, and mixture becomes glossy. Fold in cocoa very gently to not deflate whites. 
4. Drop mixture by teaspoonfuls on to a greased cookie sheet or silicone baking sheet (best). Bake for 25 to 30 minutes. 
5. Let them completely cool and dry out before you pack them up and put them away or they will turn to marshmallows. 

They tasted like fluffy oreos, very delicious!

Slow cooker salsa chicken:

3 boneless chicken breast
1 tsp chili powder
1 tsp garlic
1 tsp red pepper flakes
1 tsp cumin
1 Jar of salsa
1 can of diced tomatoes
1 cup of sliced mushrooms

Rub chicken with spices then add to crockpot and top with salsa tomatoes and mushrooms. Cook on high for 3-4 hours. Chicken is easy to shred at this point. Served shredded with cheddar cheese and diced avocado on top.

6:00am- 4 egg whites, 1 slice of bacon
10:00am- shake (probolic, superfood, spinach, blueberries, almond milk, cottage cheese)
12:00pm- tuna, spinach, cashew salad with balsamic vinaigrette dressing
4:30pm- sliced turkey and assorted nuts
7:30pm- Slow cooker salsa chicken and a few meringue cookies
